In India we referred to all meat of goat and sheep as ‘mutton. Here in New Zealand, one has to be a lot more specific.

‘Lamb’ refers to the sheep itself and the meat of sheep up to a year old. Lambs upto three months are called ‘baby lamb,’ and those up to six months are called ‘spring lamb’.

Hogget: refers to the sheep itself and the meat of sheep in the second year. I also found this term ‘yearling mutton’ online, and it refers to the meat of sheep between 12 and 20 weeks, but I have so far not come across this term in New Zealand.

‘Mutton’ refers to the sheep itself and the meat of sheep older than two years.
